Fluffy Filled Cakes – 夹馅酥松糕饼 – (Jiā xiàn sūsōng gāobǐng)

Note: Su Nuan Nuan mentioned that she uses condensed milk for the cake. Personally, I’ve never tried a condensed milk filled cake, I wonder what it’s like, lol!
- Prepare all the ingredients. Sift flour, baking powder and salt into a mixing bowl
- Beat the softened butter, gradually adding sugar as you go
- Keep beating until the butter turns into a pale yellow colour
- Add milk into the butter, and mix thoroughly
- Add the sifted flour gradually into the butter mixture and fold
- Place half of the cupcake mixture into 6 cupcake paper containers. Pipe in the blueberry jam into the middle of the mixture
- Place the rest of the batter over the blueberry jam and decorate with melon seeds
- Bake at 180 degree Celsius for 18 minutes. The time may vary depending on your oven
- You can eat them once cooled
