Sliced Lotus Root Salad – 凉拌藕片

Makes 1 plate
Ingredients:
| Lotus Root | 2 root blocks |
| Chilli | 2 |
| Scallion | 2 Stalks |
| Garlic Cloves | 4 |
| Seasoning | |
| Salt | 1 tsp |
| Sugar | 1 tsp |
| Light Soy Sauce | To taste |
| Mature Vinager | To taste |
| Spicy Oil | 2 tblsp |
| Fragrant Oil | Appropriate amount |
| Spicy Vinegar | To taste |

- Wash, peel and slice the lotus root. It doesn’t have to be too thin
- Roughly chop up the chilly, scallion and garlic cloves
- Boil the sliced lotus root in boiling water until tender. Set aside to cool.
- Mix all the liquid seasoning in a bowl making to your taste. Toss the cooled lotus root with the seasoning sauce and chopped ingredients
- Serve
